This week will be the last of the zucchini recipes, I’m hoping! I have made many different recipes and enjoyed them all.
Zucchini Mock Apple Pie
4 cups peeled, seeded and sliced zucchini
2 tablespoons lemon juice
Pinch of salt
1 1/4 cups brown sugar
1 1/2 teaspoons cinnamon
